• 1 cup French green lentils
• 3 cups of corn kernels
• 2 organic tomatoes (chopped)
• 1 organic cucumber (peeled and chopped)
• 3/4 red onion (chopped)
• 2 cups fresh organic baby spinach (chopped)
• 1/4 cup organic olive oil
• 1/4 freshly squeezed organic lemon juice
• 1salt & fresh ground pepper to taste.
• 1 organic cucumber (peeled and chopped)
In a large sauce pan bring lentils and 5 cups of water to a boil. reduce to a simmer for 15
minutes or until tender but firm. drain and rinse under cold water and set aside.
Combine lentils with remaining ingredients in a large bowl and toss and combine and serve
1/2 cucmber (peeled and chopped)
