Broccoli Mashed Potatoes

Broccoli Mashed Potatoes


  • 4-6 Yukon Potatoes, diced into 1 inch pieces
  • 1/2 broccoli bunch, roughly chopped including stem
  • 4 tbsp unsalted butter or olive oil
  • handful of chives, chopped
  • 1/4 cup unsweetened organic almond milk or organic vegetable broth
  • salt and pepper to taste


Place potatoes and broccoli stem in a pot and fill with water and bring to a boil. add broccoli florets. Once potatoes and broccoli stem can be easily pierced with a fork, remove from heat and drain. return to pot and let sit for 5 minutes and dry. then add butter and mash and slowly add liquid. once smooth add chopped chives and mix.
