BEETS
Beets have many great properties that include anti-cancer, anti-inflammatory and antioxidant. Beets contain phosphorus, sodium, magnesium, calcium, iron, and potassium, as well as fiber, vitamins A and C, niacin, biotin and folic acid. Beets (and beet juices) are a blood-building herb that detoxifies blood and renews it with minerals and natural sugars. Beet fiber helps to reduce cholesterol and triglycerides by increasing the level of HDL. High level of triglycerides increases the risk for heart related problems.
The green leaves of the beet are also delicious if fresh, and can be prepared like spinach or Swiss chard. They are rich in vitamins and minerals as well as carotenoids.
