Mac and Not Cheese -Dairy free, soy free, vegan and gluten free!
Mac & Not Cheese
(Dairy free, soy free, vegan and gluten free)
I used GoGo Quinoa Macaroni for this. You can use your own favourite pasta. I like to add a little organic hot sauce to it after to give it a kick. If you are not concerned about gluten this recipe is also great with other macaroni pastas.ingredients:
- 1 1/2 cups of butternut squash, peeled and diced
- 1/2 large onion, peeled and diced
- 16 oz gogo macaroni gluten free noodles, cook according to package directions.
- 1/4 cup water
- 1/4 cup raw cashews, soaked for 30 min
- 1 tsp lemon juice
- 1 tsp salt
- 1tsp dijon mustard
- 1/4 tsp garlic powder
- 1/4 tsp pepper
- 1/8 tsp smoked paprika
- 1/8 turmeric
- 1/8 tsp nutmeg
Instructions:
- Add butternut squash and onions to a pot and cover with water. Bring to a boil then lower to a simmer until the vegetables are tender.
- Cook macaroni according to package directions. drain and set asside.
- Once vegetables are tender, drain and add to a blender such as a Vitamix or Blendtec or whatever blender you are using and add cashews, lemon juice, salt, dijon, garlic powder, pepper, smoked paprika, turmeric, nutmeg. Blend until smooth.

Serves: 6
• 1 onion, diced
• 1 green bell pepper, diced
• 3 roma tomatoes, diced
• 6-8 mushrooms, quartered
• 1 1/2 cups cooked black beans or 1 (15 ounce) can no-salt-added or low sodium black beans
• 1 1/2 cups cooked kidney beans or 1 (15 ounce) can no-salt-added or low sodium kidney beans
• 1 1/2 cups cooked white beans or 1 (15 ounce) can no-salt-added or low sodium white beans
• 28 ounces low sodium or no-salt-added tomato sauce packed in BPA-free cartons
• 1 1/2 cups pureed cooked pumpkin or pumpkin puree packed in BPA-free cartons
• 1 tablespoon chili powder
• 1 tablespoon cumin
• 2 tablespoons Italian seasoning
• 2 cups low sodium or no-salt-added vegetable broth, or as desired
• green onions for garnish
Water sauté onion and pepper until they are starting to soften, then add tomatoes and mushrooms. Cook until soft, then add all beans, tomato sauce and then pumpkin. Add chili powder, cumin, and Italian seasoning.
To thin chili, add as little or as much vegetable broth as you'd like. If you like a thick chili, only add a few tablespoons. Keep the heat on high until the chili starts to boil, then reduce to low heat and simmer for 45 minutes.
Garnish with chopped green onions.

If you don't have a juicer you can pick up a decent masticating juicer from $200-$300 from Lexen, Omega or Hurom to get started (my favourite is the Super Angel at $1100 or Norwalk at $2800. if you can afford either of these juicers they are the best). "But I don't have the time to juice" well then you really can't afford not to make the time which takes as much time or actually less then it does to prepare an artery clogging breakfast. You can actually prepare your juice ahead of time and store in the refrigerator for use the next day.
I am going to show you how to make your juicing experience taste great and improve your fitness level almost immediately. You see, almost everyone who starts juicing gets a juicer, runs off to the super market, buys everything they can think of and then gets home and juices all the fruits and vegetables together and then yikes...it tastes horrible and you think "I just spent good money for this". This is not the way to start. I am going to provide you with a few simple ingredients and then you be the judge. You will see how this can be a great experience and not only that, it won't cost you much money at all compared to what it will cost if you don't. Actually it will cost you less than the health care costs you will have to endure if you don't change now.

Broccoli Mashed Potatoes
Broccoli Mashed Potatoes
Place potatoes and broccoli stem in a pot and fill with water and bring to a boil. add broccoli florets. Once potatoes and broccoli stem can be easily pierced with a fork, remove from heat and drain. return to pot and let sit for 5 minutes and dry. then add butter and mash and slowly add liquid. once smooth add chopped chives and mix.
- 4-6 Yukon Potatoes, diced into 1 inch pieces
- 1/2 broccoli bunch, roughly chopped including stem
- 4 tbsp unsalted butter or olive oil
- handful of chives, chopped
- 1/4 cup unsweetened organic almond milk or organic vegetable broth
- salt and pepper to taste

Organic Pico de Gallo Recipe
- 1 lb organic tomatoes, coarsely chopped
- 1/2 cup finely chopped organic white onion,
- 1/4 cup chopped organic cilantro
- 1/4 cup organic lime juice
- 1 Tbs finely chopped organic jalapeño chile,
- salt and pepper to taste
- 1 organic garlic clove, minced
- and/or
- 1 tsp ground organic cumin
Mix all ingredients together and season to taste. I like to add the garlic and the cumin but you should try it with and without to see which you prefer.

TURBO CHARGE SMOOTHIE

- 1/4 cucumber
- 1 stick celery
- 1/2 small pineapple
- handful of spinach leaves
- 1/4 lime, peeled
- 4 Golden delicious apples
- 1/2 ripe avocado
- 1 heaped teaspoon of Spirulina powder
- Small handful of ice
Instructions: Juice the cucumber, celery, pineapple, spinach, lime and apples. Place juice and Spirulina in a blender with avocado and ice and blend for 45 seconds. Pour into a glass and enjoy! As per usual everything should be as fresh and organic as possible.
