Cabbage Soup
Here is a great soup that may help you shed a few pounds. It is filling and has a kick to it.
Ingredients
1 cup of organic celery, diced
1 cup of organic carrots, diced
1 organic onion, diced
1 organic green or red bell pepper, diced
2 cloves of organic garlic, minced
1 can of organic diced tomatoes
1/2 head of cabbage, chopped
4 cups of organic vegetable broth
1 cup of water
1 tsp organic oregano
1 tsp organic basil
1/2 tsp red pepper flakes ( or chopped fresh hot peppers)
2 tbs of organic olive oil
season with sea salt and pepper to taste
Directions:
In a large pot, heat two tablespoons of olive oil.
add celery, onions, bell peppers and carrots and cook until tender
add garlic
add vegetable broth
add tomatoes and cabbage
Bring soup to a boil then reduce to a simmer and cook until cabbage is tender.
Stir in oregano, basil and red pepper flakes.
add salt and pepper to taste

A recent episode of Dr. Oz extolled the virtues of a little-known product known as yacon syrup, referred to as a “game changer” in the weight loss arena. Today we’ll look at this product and seek reviews from those who have tried it.
About Yacon SyrupYacon syrup is extracted from the tuberous roots of the yacon plant. It contains few calories (about 20 calories in a spoonful) and is low in sugar. The taste has been described as similar to molasses, raisins, or figs. The syrup contains about 30% to 50% of fructooligosaccharides (FOS), a natural sweetener which cannot be broken down easily by the human body. It passes through the digestive tract unmetabolized, resulting in a low calorie food. It is also a prebiotic, which feeds healthy flora in the bowels.
Outside of yacon syrup, you can also get FOS from a variety of fruits and vegetables such as artichokes, asparagus, bananas, garlic, and onions. FOS is also available as a supplement.

Take 1 teaspoon of 100% yacon syrup with or before each meal. It can also be used as a sugar substitute, such as in tea or coffee. Kale and Carrot Soup
2 bunches of multi coloured carrots slice into 1 inch pieces
4 cups of low sodium vegetable broth
1 15-oz can diced tomatoes in juice
2 12-oz bunches of dinosaur kale, thinly sliced
1/2 cup chopped basil,
6 whole basil leaves
2 Tbs chopped chives
1 handful whole chives
115-oz can white beans, rinsed and drained
1 Tbs. balsamic vinegar
2 garlic cloves
1 red onion sliced
Bring carrots, broth, onion, garlic, tomatoes with juice, and 2 cups water to a simmer in a large stockpot with steamer insert over medium heat.
Place kale, whole basil leaves, and whole chives in steamer insert. Set steamer inside stockpot, cover and steam 5 to 7 minutes. use tongs to stir half way through. remove and discard basil leaves and whole chives. add kale, beans and vinegar to soup and return to a simmer. Season with salt and pepper, if desired. Stir in chopped basil and chives just before serving.

Kale & Mushroom Quinoa
Serves 2,
A favourite recipe at my house that is nutrient dense, can be prepared from start to finish in 15 minutes and is delicious is Kale & Mushrooms with Quinoa. It’s easy enough too that any teen or adult can prepare it – Mom doesn't have to do everything! There are just 4 ingredients and a few condiments required to create it.
Kale is a hearty fall and winter green and is a member of the brassica family. Along with the cancer-fighting indoles and the detoxification benefits of the sulforphane, kale is extremely rich in antioxidants. It’s also loaded with calcium, iron, vitamins A, C and K, protein & fiber. It’s the perfect food to help our bodies get through the busy holiday season and cold winter weather. When we add cremini mushrooms loaded with cancer-fighting selenium and rich stress combating B-vitamins, we boost our dinner to another nutrient high! Topping the meal with walnuts ups the yum factor, while adding healthy fat to our meal.
Ingredients:
- 6-8 crisp, bright green organic kale leaves
- 8-10 cremini mushrooms (also known as baby bella)
- 1 Tbsp organic butter, or coconut oil
- Juice from half a freshly squeezed lemon
- 1 Tbsp tamari (reduced sodium)
- 5-7 walnut halves
- Extra-virgin olive oil
- Sea salt & freshly ground pepper to taste
- ½ cup organic quinoa
- 1 cup water
Directions:
Rinse the quinoa (pronounced KEEN-whah) thoroughly in a fine sieve. Add the quinoa and water to a small pot with a tight fitting lid. Bring to a boil, reduce the heat to minimum, cover and simmer for 12-15 minutes until the water has been absorbed. While the quinoa is simmering, wash the kale, discard the coarse stems and roughly chop the leaves. Wash and quarter, halve or slice the mushrooms, depending on their size. Melt the butter in a large sauté pan and add the mushrooms, kale & lemon juice. Sauté for 3-5 minutes until the mushrooms are tender and the kale is vibrant green and still a little crisp. Remove from the heat, drizzle with the tamari and olive oil and season with salt and pepper to taste. Divide the quinoa between two plates, top with kale & mushrooms, then sprinkle with walnuts.

Whole Wheat Pizza Dough
This recipe requires a little forethought, but don’t be intimidated. The night before, you mix a few ingredients in two different bowls. The next day, you combine these two doughs and add a few more ingredients. Let the dough rise and you’re ready.

If possible, use organic!
2 tbs. olive oil
3 medium size carrots, diced
1 large yellow onion
2 garlic cloves, minced
2 cups butternut squash, cut into 1/2" cubes
1/4 tsp. ground allspice
pinch of cayenne
Kosher salt or sea salt
1 quart homemade vegetable broth
5 tomatoes, diced (or 1-14oz can of diced tomatoes)
4 sprigs of fresh thyme
2 cups kale, chopped
1 cup chickpeas (cooked) (you may opt for canned chickpeas but I prefer preparing my own)
-heat oil in a large pot over medium heat.
-add carrots and onions then cook, stirring occasionally, until soft, approx 6 minutes.
-add garlic and cook for 1 minute.
-add squash, all spice, cayenne, 1 tsp salt, stir to combine.
-add broth and diced tomatoes, and thyme.
-bring to a boil, reduce heat to medium, cover, simmer for 10 minutes.
-add kale and chickpeas and cook uncovered until squash is tender and kale is wilted, about 10 minutes.
-remove thyme, season to taste with salt and serve
